Анотація
В статті розглянуто нововведення у сфері ресторанного бізнесу та охарактеризовано деякі з них, що пропонуються
в сучасних закладах ресторанного господарства. Досліджено основні тенденції у впровадженні інноваційних підходів до
обслуговування споживачів. Виокремлено етапи на яких можуть впроваджуються інновації в ресторанному бізнесі,
починаючи від отримання замовлення і закінчуючи розрахунком з офіціантом. Більш детально розглянуто невиробничі
інновації, в контексті надання послуг з організації харчування та не пов’язані з виробничим процесом. До найбільш
важливих інновацій віднесено впровадження e-MenuBoard (тобто електронні меню), використання QR-коду для
ознайомлення відвідувачів із рестораном та додатки SmartCellar або Uncorked для iPhone та iPad, які у майбутньому можуть
повністю витіснити з ресторанів винні карти і сомельє.
The purpose of the article is a synthesis of possible innovation in the restaurant business in Ukraine and characteristic areas of their use in the restaurant business establishments. In the article the innovation in the restaurant business, and described some of them are offered in the modern restaurant business establishments. The basic trends in the implementation of innovative approaches to customer service, focus on the formation of a certain kind of products, music, restaurants association, encouraging clients. Thesis there is determined stages in which innovation can take root in the restaurant business, from receipt of order and ending with the expectation of a waiter. Determined that innovation in the restaurant business, on the one hand, can be described as productive and on the other - non-productive. More details are considered non-productive innovation in the context of the provision of catering and not related to the production process. Found that innovation play an important role in the development and competitiveness of establishments catering business. So owners need to develop and implement in the implementation of various innovative methods and technologies that would improve attendance and attracted an increasing number of potential customers to your establishment. The most important innovation attributed the introduction of e-Menu Board (electronic menu), use the QR-code, to familiarize visitors with the restaurant and applications SmartCellar or Uncorked for iPhone and iPad, which in the future can completely replace the restaurants wine list and sommelier.
