dc.description.abstractПроаналізовано виробництво молочної продукції підприємствами України за видами у розрізі років. Визначено ключових гравців – переробників на національному ринку молокопродуктів. Переробкою молока в Україні займається 320 підприємств, проте майже 80 % ринку контролює 55 заводів, значна частина яких входить до складу великих холдингів. Частки ринку провідних виробників не перевищують 7–10 %. 13 компаній утримують 62 % ринку. Решту ринку розподіляють між собою дрібні компанії та одиничні молокопереробні заводи. Проведено моніторинг заготівельних цін на ринку молока в Україні та динаміку структури якості молочної сировини, що надійшла на переробні підприємства України від сільськогосподарських підприємств. Визначено, що на відповідний рівень роботи переробних молочних підприємств і на цінову політику молочного ринку мають вплив природні чинники – сезонність виробництва молочної сировини. Протягом року обсяги виробництва молока коливаються, що пов’язано з фізіологічними особливостями великої рогатої худоби, досягаючи максимальних значень у травні–липні і значно знижуючись в зимові місяці. Оцінено структуру виробництва молочної продукції в Україні. Проведено групування виробників молочної продукції в Україні. До списку лідерів молочної галузі потрапили не тільки українські переробники молока, а й транснаціональні компанії, в яких налагоджено виробництво в Україні.uk_UA
dc.description.abstractUkraine has favorable natural-climatic and organizational-technological conditions for the production and processing of dairy products. In modern conditions, the dairy industry in Ukraine is an important producer of essential for the human body important protein products, which are marked by biological value. The current stage of development of production relations in the dairy industry requires the development of effective mechanisms and approaches that would increase the efficiency of production and marketing, develop and implement a fundamentally new model of functioning of economic entities in this sector to stabilize production, create favorable investment conditions competitiveness in the consumer market, to provide the population with dairy products at the level of rational consumption norms. The production of dairy products by Ukrainian enterprises by types by years is analyzed. Key players have been identified - processors in the national dairy market – 320 enterprises are engaged in milk processing in Ukraine, but almost 80 % of the market is controlled by 55 plants, a significant part of which are part of large holdings. Market shares of leading manufacturers do not exceed 7–10 %. 13 companies hold 62 % of the market. The rest of the market is shared between small companies and individual dairies. The monitoring of procurement prices on the milk market in Ukraine and the dynamics of the quality structure of raw milk received by processing enterprises of Ukraine from agricultural enterprises were carried out. It is determined that the appropriate level of work of processing dairy enterprises and the pricing policy of the dairy market are influenced by natural factors - seasonality of raw milk production. During the year, milk production fluctuates due to the physiological characteristics of cattle, reaching maximum values in May-July and significantly decreasing in the winter months. The structure of dairy production in Ukraine is estimated. The grouping of dairy producers in Ukraine was carried out. The list of leaders in the dairy industry includes not only Ukrainian milk processors, but also multinational companies that have established production in Ukraine.uk_UA
