Анотація
Розглянута проблема адаптації підприємств ресторанного господарства до цифровізації економіки. Проаналізовано
тенденції та особливості розвитку суб’єктів підприємницької діяльності із забезпечення стравами і напоями у сучасних
економічних умовах,зокрема на регіональному ринку. Виявлені основні зміни, що суттєво впливають на зміст та інструменти
реалізації стратегій закладів ресторанного бізнесу. Визначено пріоритетні складові стратегії підприємств ресторанного
господарства в умовах цифрової трансформації, та запропоновано перспективні напрями використання потенціалу
цифрових технологій у реалізації стратегії.
Purpose of work is determination of features of process of forming and realization of strategies of development of establishments of restaurant business in the conditions of digital transformation of economy taking into account the results of research of existent market of restaurant services condition, in particular him regional segment. Restaurant business is the computer-integrated sphere of entrepreneurial activity which has good potential of development even in the conditions of the limited height of economy. Enterprises which carry out activity from providing foods and drinks combine the sphere of production of foods of feed and restaurant service which differ in a variety business. The basic results of activity of subjects of market of restaurant services are analysed in the article. Certain basic directions of changes are in the modern terms of menage. It is marked that exactly changes are conditioned by digital transformation of economy is basis for the changes of strategies of development and instruments of their realization. The conducted research of the use of instruments of digital economy is in practice of activity of enterprises of regional restaurant market. Expedient changes are certain in the strategic set of enterprises of restaurant economy in the conditions of digital transformation, and perspective directions of the use of potential of digital technologies are offered in realization of strategy. It is marked that for enterprises which work at the regional market a пріорітетну role in strategy of development has a robot with clients, that foresees them deeper understanding, increase of profit yield from present clients, search of new points of co-operating with clients. The necessity of application of changes is reasonable for the business models of establishments of restaurant economy on the basis of the use of digital platforms, which will give possibility to create the new segments of market of sale of restaurant services and form the new cost of foods. It is marked that efficiency of introduction in strategy of enterprise of digital technologies strongly depends on the simultaneous improvement of processes of management and use of modern methods of management an enterprise.
